Maturation in oak barrels gives it a pleasant spicy character. The taste is full, delicate and long-lasting. It goes well with grilled meat and hard cheeses. Interesting fact: The variety is called Primitivo because it is ahead in all respects, it blooms, colors the grapes and ripens very early. The name of the variety is derived from the Latin "primativus" or the Italian "primaticcio", in both cases meaning "early ripening". The grapes are grown in vineyards in Italy in the Puglia region and their harvest is carried out exclusively by hand at the end of August. The grapes are then carefully sorted and only the highest quality are processed further. The term Appassimento refers to a special drying method that takes place directly on the vine. Once the grapes have reached ideal ripeness (mid-August), the stalk is twisted so that no further nutrition reaches the grapes. This results in a loss of 25-30% of the juice in the grapes over a period of about 12 days. This concentrates sugar, tannins and other aromatic substances in the grapes, which subsequently give rise to a perfect concentrated aroma. The 2023 vintage received an incredible 96 points from Italian wine critic Luca Maroni.
